On the first day of our trip, all of us had a great breakfast offered by the hotel and none of us was interested with lunch. CK had a full breakfast as well. He had a bowl of cereal with milk, 1 banana, some waffle, a small glass of milk as well as juice. So, at noon I fed him some left over pound cake from his previous dinner. And off he went to chase after the seagulls.

Since we missed lunch, we went to have an early dinner. We chose Buzzy’s New York Style Pizza near Niagara Falls. My dearest hubby found this place on TripAdvisor website. And it was a right choice. The pizza taste good. Very plain restaurant but the food and prices are GREAT! We ordered some Buffalo Wings too and they were HOT !! It was my hubby’s choice although the waitress recommended MILD. CK was hungry but he seems too excited to eat. He ended up eating not much.

After a 2 hours drive we arrived at Canandaigua, NY. Since CK didn’t had much pizza earlier, I decided to get him some chinese take out. I ordered him a small Roast Pork and rice. Guess what, he really really miss rice a lot. He ate more than I expected and at a fast pace which never happened at home. So, I think it is either he misses rice a lot or he likes the taste of american chinese take out. If it is the former, he will be second 饭桶 of the family. Guess who is the first?…

For this trip we brought along a portable potty for CK so that there is place for him to pee when we can’t find a bathroom. I find this portable potty very convenient for road trip. It is can be easily store in our backpack. Just that you need lots of plastic bags as that’s where he gonna pee into.

Oh..CK has been very very obedient in terms of going to the bathroom during the trip. He was basically ‘accident free’. He will tell us that he needs to pee whenever he wants to. At first I thought maybe he is well behave when he is outside. However, it seems since our return from vacation, he will tell us whenever he wants to pee or past motion. He even will run to the bathroom if it is for BIG BUSINESS. By the way, he is also able to ‘hold’ from peeing when I told him to wait especially if I want to rush him to a nearby bathroom rather than going through the hassle with the portable potty. This ‘hold’ thingy was confirmed last weekend when I brought him to Yvonne’s house. We were at a red light at the corner of the  apartment complex and CK said ‘Shh..shh..’. Both Daddy & I told him ‘WAIT…ok? We are almost there already.’ His gave a weird expression wondering why we asked him to wait. Good news…he didn’t pee in the car seat but waited till we arrive at the apartment and into the bathroom. What a joy to all of us. So, I think he has graduated from potty training. My boy is a BIG BOY now. I will give him a break and start the night time training few months later.

I like using the oven to bake main dishes as I have lesser cooking utensil to wash after that. All I need to do is marinade the chicken wings for a few hours and put them into the oven to bake for 30 mins.

Ingredients

  • 8-10 chicken wings (separate the wings and drumettes)
  • 1 tbsp garlic salt

Marinade

  • 2 tbsp hoisin sauce
  • 2 tbsp Shau Xing Cooking Wine
  • 2 tbsp oyster sauce
  • 2 tsp dried parsley flakes
  • 1 tsp sugar
  • pinch of salt
  • 1 tbsp grated ginger with juice

Method

  1. Rub garlic salt on the chicken wings.
  2. Mixed the Marinade ingredients in a bowl.
  3. Add in chicken wings and marinade for 20-30 mins at room temperature or a few hours/overnight in the refrigerator.
  4. Mix the chicken once by bringing the wings at the bottom of the bowl to the top. this is to ensure all the wings is marinaded evenly. (You can always place all the wings in a Ziploc bag. All you need to do is the turn the bag once a while)
  5. Arrange chicken wings in a single layer on a cookie sheet. Brush some of the marinade onto the wings.
  6. Bake in preheated oven of 400F for 15 mins.
  7. Turn the wings, brush remaining marinade onto wings and bake for additional 15 mins.
  8. Turn off oven, and let wings stand for about 3-5 mins in the oven.
  9. Arrange on a dish and pour the juice over it. Serve hot or at room temperature.

We decided to go out of town during the Labor Day weekend. Together with my parents we brought CK to Niagara Falls, NY and the Finger Lakes Region, NY.

On Aug 28th at 15:00 we left home. CK was so excited that he didn’t want to take his afternoon nap during the regular hours. I think he knew we are going somewhere when he saw our packing activities. So, the moment I went on to I-295, he dozed off.

I had CK put on the Huggies Training Pants as I was afraid with all the check-in and going through airport security that he might be too excited to tell us he need to pee. When I put on the training pants, he said ‘Diaper’.

I answered ‘不是 diaper, 是裤. 要小便跟 Mummy 讲.’ (No…this is not Diaper. It is a pair of pants. Tell mummy if you want to pee.) 😉 (Note : not sure is this ”跟’ the correct chinese character to be used here. Correct me if it is not.)

I kept on reminding him he is not wearing diaper although the Training Pants is a thinner version diaper. ha! I just doesn’t want him to get confused.

We got through check-in and airport security with no trouble. CK was very cooperative. However, the moment we got to our departure gate, he became so excited seeing the airplanes park at their respective gates. All this while he was only able to view the planes flying in the sky whenever he was outside the house. This time, he was up close with the planes. He was running from one side of the building to the other pointing at the planes and said ‘飞机’ & ‘airplane’. He will continue to say ‘坐坐’ (sit). Unfortunately, our flight from Richmond-JFK was delayed by an hour and finally departed at 6pm.

At 6pm, CK’s dream was granted. He was in the plane, window seat. His vision focus on all the planes at the airport. Obviously, he will name every single vehicle that was moving around e.g. gasoline truck, shuttle bus, airplane you name it. When the plane began to taxi on the runway, he bid farewell to the planes. ‘Bye, Bye’ waving his hands at the same time. He was pretty cute then. ha! When the plane finally took off, he was a bit frightened. He actually held onto me, but less then a minute, he was back to his old self…climbing up for the view, pulling the shade down & up again. He finally took another nap when we were going to land at JFK.

All of us had Burger King for dinner except CK as he was still in Dreamland. When he got up, he was running about again. I got him a slice of marble pound cake from Starbucks. Followed by a bottle of milk. So, my boy had pound cake and milk for dinner. He loves cake.

Our flight to Buffalo was delayed again at JFK. It was scheduled to depart at 10.20pm but didn’t take off until 11.20pm. This was due to we boarded the plane at 10.15pm and there was heavy traffic at the airport. CK again was excited being on the plane again. Looking out of the window at all the lights and planes. The he noticed the switch of the reading lights. I need not tell you what happened next. Once the plane took off, he was so fascinated by the lights that lit up New York City. CK did not sleep at all during this second leg of the journey. He finally slept while we were on the way to the hotel. By the time we arrived at hotel, it was already 1.20am.

With all the delays, at the least there was a consolation. I rented a Full Size car and got a SUV (Toyota RAV 4) instead for the same price. Yes…FREE UPGRADE due to the rental company did not have anymore Full Size category cars available for us. So, arriving so late at night has an advantage. hahaha……
