I haven’t been baking since my mother went back to Malaysia. Now that my mother-in-law is here to help out, I have time to bake again. Here again is another good recipe for muffins i.e. Chocolate Chip Muffins.This recipe is definitely a keeper.

Ingredients :

  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 cup of milk/cream
  • 1 1/2 tsp pure vanilla extract
  • 2 cups all purpose flour
  • 2/3 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips

Method :

  1. Preheat oven to 375F (190 C). Position rack in center of oven. Butter or line with paper liners muffin cups.
  2. In a large measuring cup or bowl whisk together eggs, milk and vanilla extract.
  3. In another large bowl whisk together the flour, sugar, baking powder and salt.
  4. Stir in the chocolate chips. With a rubber spatula fold the wet ingredients, along with the melted butter, into the dry ingredients and stir only until the ingredients are combined. Do not over mix the batter or tough muffin will result.
  5. Evenly fill the muffin cups with the batter, using two spoons or an ice-cream scoop.
  6. Place in the oven and bake until a toothpick inserted in the center of a muffin comes out clean, about 18-20 minutes. Transfer to a wire rack and let cool for about 5 minutes before removing from the pan.

    Yield : 12 regular size muffins.

    Mummy : CK likes it hot or cold?

    CK : Hot

    Mummy : Why?

    CK : No need to wear Jacket !!

    I was quite surprise at the answer CK provided as I didn’t expect him to know the cause and effect theory.
